Savory Slow Cooker Italian Beef Sandwiches

Ingredients
2½–3½ lb beef chuck roast (cross rib, arm, or shoulder)

1 packet Italian dressing mix

1 tsp dried Italian seasoning

1 tsp granulated garlic

1 cup low-sodium beef broth

¼ cup sliced banana peppers

For Serving:
4 hoagie rolls

cheese slices of choice (optional)

Giardiniera (optional, for topping)

Instructions

Season the Roast
: Pat the beef dry. Rub the Italian dressing mix, Italian seasoning, and granulated garlic evenly over the entire roast.

Layer the Slow Cooker: 
Place banana peppers (optional) on the bottom of the slow cooker. Add the seasoned roast on top and pour in the beef broth.

Cook Until Tender: 
Cover and cook on LOW for 8 hours or HIGH for 6 hours, until the beef is fork-tender and easily shreds.

Shred the Beef: 
Remove the beef from the slow cooker and shred with two forks. Return shredded meat to the slow cooker to soak in the juices until ready to serve.

Assemble the Sandwiches
: Lightly toast hoagie rolls. Pile high with shredded beef, top with giardiniera or cheese (if using), and extra banana peppers if desired.
