Skirt Steak Tacos with Grilled Nopales

Skirt Steak Tacos with Grilled Nopales

These are amazing tacos with grilled cactus (nopales). I used a skirt steak seasoned with steak seasoning and grilled to medium rare. Use your favorite tortillas and toppings.

Ingredients

1 skirt steak, seasoned with steak seasoning
4 nopal (cactus) leaves
2 cups chopped lettuce
2 cups refried beans
2 cups Mexican style shredded cheese
Corn tortillas
Toppings of choice

Instructions

Season the skirt steak with steak seasoning and set aside until ready to grill.

To prepare the cactus leaves, using a knife, scrape the surface of the leave to remove the cactus needles. Using a pair of kitchen shears, cut the edge off the cactus to remove and needles around the edges. Rinse the leaf off and carefully check to make sure all the needles have been removed.

Grill the steak to medium rare, remove from the grill and let rest for about 10 minutes before slicing.

Grill the prepared cactus leaves for about 4 minutes on each side. Remove from the grill and slice them into strips.

Slice the grilled skirt steak into strips and set aside.

Pan fry the corn tortillas and build the tacos with the re-fried beans, prepared steak and nopales (cactus). Top with your favorite toppings (salsa, sour cream, chopped lettuce, shredded cheese…) and enjoy.
