Simple Pasta Salad
I love pasta salads and make them often. They are great for using up re-purposing leftovers. This simple pasta salad keeps great in the fridge and actually taste better the next day after making.
Ingredients
1 1/2 pounds elbow macaroni
1 head broccoli
2 parsnips, diced
2 bell pepper, diced
1/2 cup diced onion
4 roma tomatoes, diced
1/2 cup olive oil
1/4 cup balsamic vinegar
1/4 cup no-salt seasoning blend
2 tsp salt
1 tbsp black pepper

Remove the broccoli florets from the base and place in a large bowl along with the diced parsnips.

Cook the elbow macaroni as directed by the package directions and about the last 3-4 minutes of boiling, add the broccoli and parsnips to the boiling water and cook with the pasta.

Drain and rinse the pasta under cold water. Once the pasta is cooled and drained, add it to a large bowl.

To the pasta add the diced bell pepper, diced onion and diced roma tomatoes. Mix everything together to combine.

In a separate bowl whisk the olive oil, balsamic vinegar, no-salt seasoning blend, salt and black pepper to a large bowl until well combined.

Pour the dressing over the pasta and gently fold everything together to combine. Serve and enjoy!
