Simple Chicken Stir-Fry
Delicious and easy are great options for dinner. If you don’t like a chicken stir-fry, use shrimp or substitute tofu for a vegetarian delight. However you make it, you’re gonna love this recipe from The American Heart Association.
Ingredients
2 cups cooked brown rice
2 small boneless skinless chicken breasts
1 tbsp extra virgin olive oil
1/2 medium cabbage, shredded
4 medium carrots, peeled and julienned cut
2 tbsp low-sodium soy sauce
2 tbsp honey
1 tbsp peanut butter
1/2 tsp powdered ginger
1 tbsp chopped unsalted, uncoiled peanuts
Instructions

Cook the rice according to the package directions.

Cut the chicken breast into bite size pieces and set aside.

Heat a large sauté pan on the stove and add the extra virgin olive to the pan and fully cook the chicken through. Remove the chicken from the pan and set aside on a clean plate.

Add the shredded cabbage and julienned cut carrots and sauté for a couple of minutes. Add the cook chicken back to the pan and continue sautéing for an additional minute.

In a small bowl, mix the soy sauce, honey, peanut butter and powdered ginger together until combined. Pour the soy mixture into the stir fried mixture and stir to combine.

Serve over the cooked brown rice with a sprinkle of the chopped peanuts. Enjoy!
