Simple Asian Beef Salad

Ingredients

1 beef Top Sirloin Steak Boneless, cut 3/4 inch thick (about 1 pound)
1/4 cup soy sauce
2 tablespoons rice vinegar
2 tablespoons vegetable oil
1 tablespoon honey
1 teaspoon grated fresh ginger
1 garlic clove, minced
4 cups mixed salad greens
1/2 cup shredded carrots
1/2 cup sliced red bell pepper
1/4 cup chopped fresh cilantro
1/4 cup chopped green onions
1/4 cup chopped peanuts (optional)

Instructions

In a small bowl, whisk together soy sauce, rice vinegar, vegetable oil, honey, ginger, and garlic. Place the beef in a resealable plastic bag and pour half of the marinade over it. Seal the bag and refrigerate for at least 30 minutes, or up to 2 hours. Reserve the remaining marinade for dressing.

Preheat a grill or grill pan over medium-high heat. Remove the beef from the marinade, discarding the used marinade. Grill the beef for 4-5 minutes per side or until it reaches your desired doneness. Let it rest for 5 minutes before slicing thinly against the grain.

In a large bowl, combine the salad greens, carrots, bell pepper, cilantro, and green onions. Toss with the reserved marinade.

Divide the salad among four plates. Top with sliced beef and sprinkle with chopped peanuts if using. Serve immediately.
