Sicilian Style Pasta
This pasta is so delicious and easy to make. I like to add fish like sword fish, salmon or cod to this pasta for a tasty variations.
Ingredients
1 pound pasta (penne, rigatoni, cannelloni…)
1/3 cup minced onion
4-5 garlic cloves
3 anchovy fillets
6 tomatoes, chopped
1/2 cup chopped parsley
1 cup pitted green olives
1/4 cup chopped green olives
1/3 cup capers
1 cup white wine
Olive oil
Salt an pepper to taste
Instructions

Cook pasta according to package directions, drain and set aside.

Heat a large fry pan on the stove and add enough olive oil to lightly coat the bottom of the pan.

Add the minced onion, garlic cloves and anchovy fillets. Sauté for a couple of minutes.

Add the chopped tomatoes and saute for three minutes. Add the chopped parsley, green olives and capers sautéing for a couple of minutes. Add the white wine and reduce by half.

Transfer the cooked pasta to the sauce, gently stir to combine. Serve with your favorite sides and enjoy.
