Delicious Shrimp Tacos: Quick and Easy Recipe

Ingredients

1 pound shrimp, cleaned and tails removed
1/2 tsp smoked paprika
2 tsp Mexican seasoning (I used Tajin Classico Seasoning)
1 tsp garlic powder
1 tsp onion powder
2 tbsp olive oil
Chopped cilantro or parsley for garnish
2 cups shredded cabbage
1 bunch green onions, chopped
1 cucumber, chopped
1 bunch radishes, chopped
Corn tortillas
Thousand Island dressing, for dipping

Instructions

Prepare the Shrimp: In a large bowl, toss the shrimp with olive oil, chili powder, garlic powder, cumin, smoked paprika, salt, and pepper until well-coated.

Cook the Shrimp: Heat a skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side, or until they are pink and opaque. Remove from heat.

Warm the Tortillas: Heat the corn tortillas in a dry skillet or microwave until warm and pliable.

Assemble the Tacos: Place a few shrimp on each tortilla. Top with shredded cabbage, cilantro, red onion, and avocado slices. I like making a slaw with red wine vinegar and olive oil, salt and pepper tossed together. Add anything to it like radishes, onions, cucumbers, etc.

Serve: Squeeze fresh lime juice over the tacos along with a little drizzle of Mexican sour cream and thousand island dressing, serve immediately. Enjoy!
