Shrimp Stuffed Mushrooms

Shrimp Stuffed Mushrooms

Stuffed mushrooms can be an appetizer or a delicious meal served with your favorite side dishes.

Ingredients

1 cup chopped spinach
1 pound cooked shrimp, de-veined, de-shelled and finely chopped
1 1/2 cups ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup shredded parmesan cheese
15 - 20 button mushrooms, stem removed and reserved
1/2 cup panko bread crumbs
1/2 cup chopped onion
2 garlic cloves, minced
Salt and pepper to taste
Olive oil as needed

Instructions

In a large bowl add the chopped spinach, finely chopped shrimp and ricotta cheese mixing everything together until combined. Salt and pepper to taste.

Remove the stems from the button mushrooms and brush the tops off with a clean cloth, if needed and set aside.

Heat a sauté pan and cook the button mushroom stems, onions and garlic for about 5 minutes. Add the bread crumbs to the mixture and mix together.

Add the sautéed onion mixture to the shrimp mixture and mix everything together.

Carefully spoon the filling into the mushroom tops and dip them in the shredded mozzarella and parmesan cheese.

Bake in a 400 degree oven for about 10 minutes or until the cheese has melted and browned.

Remove from the oven and serve with your favorite sides.
