Shrimp Salad
This easy to make shrimp salad goes great on rolls or a bed of lettuce. You can use can shrimp (drained) in this recipe if you choose.
Ingredients
1 pound shrimp
3 stalks of celery
1/2 cup parsley
1/2 cup chopped red onion
2 tbsp minced fresh dill
1 tbsp lemon juice
1 tbsp dijon mustard
3/4 cup mayonnaise
Salt and pepper to taste

Cook, devein and remove the shells from the shrimp. Place them in the bowl of your food processor.

Quarter the celery stalks and add them to the food processor along with the parsley, red onion, fresh dill, lemon juice and dijon mustard. Pulse the food processor to finish chopping everything up. Remove the mixture to a large bowl.

Fold the mayonnaise into the shrimp mixture and add salt and pepper to your taste.

Serve the freshly made shrimp salad on top of a bed of lettuce or a delicious roll.
