Shrimp Louie Salad
This Shrimp Louie Salad is a refreshing and satisfying classic, featuring bay shrimp, crisp iceberg lettuce, hard-boiled eggs, tomatoes, cucumbers, and a tangy homemade Thousand Island dressing. Perfect for a light yet filling lunch.
Ingredients
2 cups iceberg lettuce, chopped
1/2 pound bay shrimp, cooked and chilled
2 hard-boiled eggs, quartered
1/2 cup cherry tomatoes, halved
1/2 cucumber, sliced
1/4 cup red onion, thinly sliced
1 avocado, sliced
1/4 cup black olives (optional)
Lemon wedges for garnish
Thousand Island Dressing: 1/2 cup mayonnaise
2 tbsp ketchup
1 tbsp sweet pickle relish
1 tsp lemon juice
1 tsp white vinegar
Salt and pepper to taste

In a small bowl, whisk together mayonnaise, ketchup, sweet pickle relish, lemon juice, and vinegar. Season with salt and pepper to taste. Set aside.

On a large plate or salad bowl, arrange chopped iceberg lettuce as the base.

Evenly distribute bay shrimp, hard-boiled eggs, cherry tomatoes, cucumber slices, red onion, and avocado on top of the lettuce.
