Shaved Fennel and Apple Salad with Lemon Vinaigrette

Add a refreshing touch to your Thanksgiving table with this light and crisp **Shaved Fennel and Apple Salad with Lemon Vinaigrette**. It’s the perfect balance of sweetness, tang, and crunch!  

Ingredients

2 medium fennel bulbs, trimmed and thinly sliced
2 tart apples (like Granny Smith), cored and thinly sliced
1/4 cup fresh parsley leaves, chopped
1/4 cup pomegranate seeds (optional, for garnish)
1/3 cup shaved Parmesan cheese
Lemon Vinaigrette: 1/4 cup olive oil
2 tbsp fresh lemon juice
1 tsp Dijon mustard
1 tsp honey
Salt and pepper to taste

Instructions

Prepare the Salad: Using a mandoline or sharp knife, thinly slice the fennel bulbs and apples. Place the fennel and apple slices in a large bowl. Add the chopped parsley.

Make the Dressing: In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper until emulsified.

Toss the Salad: Pour the dressing over the fennel and apple mixture. Toss gently to coat.
