
Shallow Poached Salmon with a Dill Lemon Veloute Sauce
Amazing food doesn’t have to be complicated to make. Enjoy this classical French dish right from your home kitchen and really impress your family and friends!

Ingredients
3-4 Salmon Fillets
1 cup vegetable stock
1 cup white wine
2-3 bay leaves
2 shallots, finely minced
4 tbsp butter
4 tbsp flour
1 tbsp dill
1 tbsp fresh lemon juice
1/4 cup heavy cream
Salt and pepper to taste
Instructions

In a large skillet, add the vegetable stock, white wine and bay leaves into a skillet.

Meanwhile in a separate sauce pan melt the the butter and whisk the flour and stir for about a minute. Remove from the heat and set aside.

Once the salmon is poached remove it and place on your serving plate with your favorite side dishes.

Strain the remaining poaching liquid into the freshly made roux and whisk together while bringing to a simmer. Continue stirring and cooking for a couple of minutes to cook out the flour.

Finish the sauce with the cream, dill and lemon juice by stirring it in. Spoon the veloute sauce over the poached salmon, serve and enjoy.
