Savory Sweet Pork Agrodolce: A Delicious Italian-Inspired Delight

Ingredients

1.5 lbs pork tenderloin or 4 pork chops
Salt and freshly ground black pepper
2 tbsp olive oil
1 medium onion, thinly sliced
2 cloves garlic, minced
1/2 cup chicken broth
1/2 cup balsamic vinegar
1/4 cup red wine vinegar
1/4 cup honey
1/4 cup brown sugar
1/2 cup raisins
1/4 cup walnuts, toasted
4 tbsp butter
Fresh parsley, chopped, for garnish
Your favorite sides, potatoes or rice, vegetable etc.

Instructions

Season the pork tenderloin or pork chops generously with salt and pepper on both sides.

In a large skillet, heat the olive oil over medium-high heat. Add the pork and sear on all sides until golden brown, about 3-4 minutes per side. Once seared, remove the pork from the skillet and set aside.

In the same skillet, add the sliced onion and sauté until translucent, about 5-7 minutes. Add the minced garlic and sauté for another 1-2 minutes until fragrant.

Pour in the chicken broth, balsamic vinegar, and red wine vinegar, stirring to combine. Add the honey, brown sugar, and raisins, and bring the mixture to a simmer.

Return the seared pork to the skillet, nestling it into the sauce. Reduce the heat to low, cover, and let it simmer until the pork is cooked through and tender. If using pork chops, they may cook faster, so check for doneness around 5 minutes. Occasionally spoon some of the sauce over the pork to keep it moist.

Once the pork is cooked, remove it from the skillet and let it rest for a few minutes. Meanwhile, continue to simmer the sauce uncovered for a few more minutes to thicken it if necessary. Swirl in about 4 tbsp of butter to create a thick and delicious sauce.

Slice the pork tenderloin if using and arrange on a serving platter. Spoon the agrodolce sauce over the pork. Sprinkle with toasted walnuts and chopped fresh parsley. Serve with a side of roasted vegetables, mashed potatoes, or a simple salad for a complete meal.
