Artichokes
Preparing artichokes isn’t difficult but can take a little time. They are delicious, steamed, poached, baked or grilled and go perfect with summer time menus! Here’s a link on my Facebook page on how to prepare artichokes.
Ingredients
4 large artichokes
1/4 cup olive oil
1/4 chop chopped fresh oregano
1/4 cup chopped fresh parsley
1 tbsp minced garlic
salt and pepper to taste

Prepare the artichokes by peeling the stalk, removing small leaves from around the base, chopping the top off of the artichoke, remove the center “bud" and clipping off the tips of the remaining leaves to remove the sharp pointer. Place them in your pressure cooker with white wine, chicken stock or any kind of stock or liquid you would like.

Pressure cooker on high for 6 minutes and quick release the steam as directed by your pressure cooker instructions.

While the artichokes are cooking, whisk the olive oil, oregano, parsley and minced garlic together.,

When cooked, remove the artichokes from the pressure cooker and place them in a large bowl. Pour the olive oil mixture over the artichokes, toss to coat.

Place the artichokes, cut side down, on the grill for about 3 minutes or until they have a nice grill mark. Serve with your favorite dipping sauce and enjoy!
