Ingredients

8 cups beef or chicken broth
2 pkg gelatin (about 2 tbsp)
1-2 tablespoons fish sauce
2-3 Lime leaves or juice of one lime
2 tbsp soy sauce
4-inch piece of ginger, sliced
1 small onion, chopped
4 mushrooms
1 small bunch parsley
1 cup chopped pork belly
8-12 ounces rice noodles
1 pound beef or chicken, thinly sliced
Bean sprouts, Thai basil, cilantro, lime wedges, bokchoy (for garnish)

Instructions

Boil the beef or chicken broth in a large pot.

Add gelatin, halved onions, ginger slices, fish sauce, soy sauce, chopped onion, mushrooms, and parsley. Simmer for 10 minutes.

Reduce heat and let the broth simmer for 30 minutes to infuse flavors.

Cook rice noodles according to package instructions, drain, and set aside.

Pan sear beef on all sides, then thinly slice once cooled.

Boil pork belly slices for 5 minutes, strain, pat dry, season, and pan sear until crispy.

Cook thinly sliced beef in the broth or add raw beef to serving bowls and pour hot broth over them.

Divide cooked rice noodles among serving bowls. Top with beef slices and desired garnishes.

Ladle hot broth over noodles and beef, ensuring they are fully submerged.

Serve with bean sprouts, Thai basil, cilantro, lime wedges, and chili peppers on the side. Customize to taste.
