Salmon Fillet Sandwich with Broccoli Slaw
Here’s a delicious idea that uses broccoli as the greens on your salmon sandwich. I like to use a mayonnaise base that doubles as the mayonnaise on my sandwich. Serve and enjoy with your favorite sides.
Ingredients
4 salmon fillets, 8-10 ounces each
2 stalks of broccoli, florets remove and cut into bite-size pieces
1 green bell pepper
1 bunch green onions, chopped
2 cups shredded red cabbage
1 bunch parsley, finely chopped
2 tsp freshly grated ginger
1 cup mayonnaise
2 tbsp yellow mustard
Juice from one lime
2 tsp sesame seed oil
1-2 tbsp apple cider vinegar
Hoggie Buns
Salt and pepper to taste
Instructions

Salt and pepper the salmon fillets and broil them for about 8 minutes or until they are cooked through. Be sure to watch them so they don’t burn.

In a large bowl, add the little broccoli florets you’ve cut. Peel the broccoli stalks and shred them. I like to add the prepared broccoli stalks, green bell pepper, green onions, ginger and green onions into the food processor with the shredder blade attached and shred them all together.

Transfer the shredded mixture into a the large bowl along with the broccoli florets and the shredded red cabbage.

In a small bowl whisk together the mayonnaise, yellow mustard, lime juice, sesame seed oil and apple cider vinegar until well blended. Fold the mayonnaise mixture into the shredded broccoli mixture until blended together. Adjust salt and pepper to taste.

To assemble the sandwich, spoon the broccoli coleslaw on the bottom half of the bun and top with the cooked salmon fillet. Serve and enjoy with your favorite sides!
