Healthy Salmon Bento Box Meal Prep Recipe | Easy and Delicious
Prepare a delicious and healthy salmon bento box with this easy-to-follow recipe inspired by Chef Bryan Woolley. Perfect for meal prep, this recipe ensures you have balanced meals ready for the week.
Ingredients
1.3 lbs salmon, 4 fillets (5.3 oz each)
1 tsp salt
1 tsp cooking sake
2 cups rice
1 ¾ cups water
1 tsp dried seaweed (kombu)
1 ½ tbsp soy sauce
1 tbsp sake
1 tbsp mirin
1 cup grated carrot
½ cup chopped green onion
1 tbsp sesame seeds
1 ½ cups broccoli
Sauce:
2 tbsp water
2 tbsp soy sauce
2 tbsp mirin
2 tbsp sake
1 tsp dried seaweed (kombu)
1 tbsp sugar
½ tsp corn starch

Salt and sprinkle the sake over the salmon, gently rub to mix, set aside.

Rinse the rice and add it to your rice cooker along with water, kombu, soy sauce, sake, mirin, grated carrot, chopped green onions, sesame seeds, and diced broccoli stalks. (Peel and dice the broccoli stalks.)

Reserve the broccoli tops, boil for 2.5 minutes, drain, and set aside.

To make the sauce, combine water, soy sauce, mirin, sake, kombu, sugar, and corn starch in a small pan. Simmer for about 45 seconds to thicken.

When the rice and salmon are finished cooking, remove the salmon to a plate, add additional chopped onions and a tbsp of butter to the rice, and gently fold.

Divide the rice between 4 meal prep containers, top with a salmon fillet, divide the broccoli florets between containers, and sprinkle with additional sesame seeds.

Spoon the teriyaki sauce over the salmon, cover each container with its lid, and refrigerate. Use during the week for easy dinners.
