Ingredients
2.8 oz Beaufort cheese (Gruyère or Comté also work well), cubed
A handful of walnuts
1/2 Granny Smith apple, cubed
4 slices of bacon, cubed
A handful of croutons, cubed
2 medium cooked potatoes, cubed
Parsley, chopped, for garnish
Mixed salad leaves (e.g., arugula, spinach, or lettuce)
Optional: A few slices of cured ham
For the Mustard Vinaigrette: 1 tablespoon Dijon mustard
2 tablespoons red wine vinegar
6 tablespoons extra virgin olive oil (or walnut oil)
