Ropa Vieja

Ropa Vieja

Enjoy a wonderful taste of Cuba with this shredded beef, beans, rice and fried bananas.

Ingredients

1 flank steak
1 tbsp Goya Adobo seasoning
1 packet Sazon seasoning
1 cup tomato sauce
2 tsp beef bullion
2 tsp chicken bullion
1 large onion, peeled and chopped
1 bell pepper, chopped
1/2 cup pimento stuffed olives
1 cup water
4 bay leaves
2 cups long-grained rice, washed
1/2 cup minced onion
1/4 cup minced red bell pepper
3 1/2 cups chicken or beef bullion
3 cups black beans, cooked
2 plantain bananas, skin removed and sliced
Extra Virgin Olive Oil
Salt and pepper to taste

Instructions

Heat a large bottom pressure cooker on the stove and add enough oil to lightly coat the bottom.

Brown the flank steak in the pressure cooker bottom.

Add the Goya and Sazon seasoning along with the tomato sauce, beef and chicken bullion, chopped large onion and bell pepper as well as the pimento stuffed olives, water and bay leaves.

Seal the pressure cooker lid and pressure cook for 45 minutes. When finished, let the pressure release naturally, remove the lid and shred the flank steak with two forks. Serve with the rice, beans and fried bananas.

To make the rice, heat a large sauce pan on the stove, add enough oil to lightly coat the bottom of the pan. Add the rinsed rice, mined onion and bell pepper. Fry the mixture for about 2 minutes. Add the 3 1/2 cups beef or chicken bullion. Turn the heat down and simmer the rice with the lid on it until the rice has absorbed the liquid. If needed, add additional liquid to the rice.

To make the fried bananas, heat a large saute pan on the stove and add enough oil to have about 1/4 inch in the pan.

When the oil is hot, add the bananas and fry for about 2 minutes on each side or until golden brown. Remove the bananas from the oil and place each banana in-between two paper towels smashing the bananas into a pancake with your hands. If the bananas are too hot, let them cool. Add the bananas back to the hot oil and fry for about 1 minute more on each side. Remove and place them on a paper towel to drain.
