Roasted Garlic Alfredo Stuffed Spaghetti Squash Boat
Delicious spaghetti squash filled with a cheese Alfredo filling is an incredible idea for dinner!
Ingredients
1 small/medium spaghetti squash
1 cup milk
3 cups shredded cheese
1 cup spinach, blanched and drained
1 tsp ground sage
1 tsp ground thyme
1 head of garlic
1 stick of butter (8 tbsp), softened
1/2 tsp ground sage
1/2 cup grated parmesan cheese
Olive oil
Salt an pepper

Preheat your oven to 350 degree’s.

Cut the spaghetti squash in half and remove all the seeds, set aside.

Line a baking sheet with aluminum foil and lightly spray with cooking spray.

Place the prepared squash halves on the baking sheet, cut side up and sprinkle with salt and pepper.

In a large bowl combine the milk, shredded cheese, prepared spinach, sage and thyme. Sprinkle with some salt and pepper and mix together. Dived the mixture between the two prepared spaghetti squash halves.

Lightly cover the prepared squash with aluminum foil.

Cut the top off of the garlic head and place in a square piece of aluminum foil. Drizzle with olive oil, salt and pepper and wrap the garlic head up with the foil. Place on the baking sheet with the prepared squash.

Place in the oven and bake for approximately 30 minutes. Remove from the oven and set aside.

Once the garlic head has cooled, squeeze out the roasted pieces of garlic into a bowl with the softened butter, 1/2 tsp ground sage and the grated parmesan cheese. Mix until well combined.

Spoon some of the garlic butter onto the squash, using a spoon or fork, remove the squash to a plate. Gently mix together, serve and enjoy!
