Ricotta and Sun Dried Tomato Pasta
This delicious pasta dish is really fun to make. If you’re in a hurry this is a great go-to dish for dinner. It pairs perfectly with grilled beef, chicken or seafood.
Ingredients
1 cup ricotta cheese
12 sun dried tomatoes, rehydrated
1 small onion chopped
1 tbsp Italian seasoning
4-5 garlic cloves
5 large basil leaves
1 pkg fettuccini pasta, cooked
Salt and pepper to taste

In the bowl of your food processor, add the ricotta cheese, rehydrated sun dried tomatoes, chopped small onion, Italian seasoning, garlic cloves and the large basil leaves. Puree everything together until smooth to create the sauce. Salt and pepper to taste.

Add the prepared sauce to a large frying pan and heat up. Add the prepared pasta to the sauce and toss to coat.

To serve, place the pasta on a large platter, sprinkle with parmesan cheese (if desired) and top with some freshly chopped basil. This pasta can easily be served with grilled steak, chicken or seafood.
