Ingredients

2 cups uncooked orzo pasta
1/2 cup uncooked bulgar wheat
2 cups chopped cucumber
2 cups chopped tomatoes
1 cup chopped red onion
1 cup chopped fresh parsley
1/2 cup chopped fresh mint
1/2 cup lemon juice
1/2 cup olive oil
Salt and pepper to taste

Instructions

Cook the orzo pasta and bulgar wheat according to package instructions. Once cooked, drain and rinse with cold water to cool down.

In a large mixing bowl, combine the cooked orzo pasta, chopped cucumber, tomatoes, red onion, parsley, and mint.
