
Red Velvet Cookies with Lemon Curd
Need a delicious dessert red velvet cookie with lemon curd idea for dinner? These cookies are so easy to make as well as the lemon curd that finishes off these masterpieces.

Ingredients
1 box red velvet cake mix
2 large eggs
1/3 cup oil
For the lemon curd:
1/2 cup fresh lemon juice
1 cup sugar
5 egg yolks
2 tbsp corn starch
1 stick butter, 8 tbsp

Preheat your oven to 350 degree’s.

In a large bowl add the red velvet cake mix along with the eggs and oil. Mix everything together until combined.

Portion out approximately 12 drop cookies on a parchment lined baking sheet.

Bake the cookies for 11 minutes, remove from the oven and let them cool on the baking sheet and set aside.

To make the lemon curd: To a large sauce pan, add the lemon juice, sugar, egg yolks and cornstarch. Mix everything together until combined.

Bring the lemon curd to a boil while stirring and simmer for a couple of minutes. Strain the lemon curd through a fine mesh strainer while hot into a bowl.

Cut the butter into small pieces and stir it into the hot and strained lemon curd until fully incorporated.

Let the lemon curd fully cool before using. I like to cover it and place it in the refrigerator for a couple of hours to cool.

To create the red velvet cookie sandwich, on the flat surface of the cookie, spoon about 2 tsp of lemon curd and place the second cookie on top creating a sandwich (sandwich the cookies using the flat sides of the cookie).
