Red Curry Pork Stir Fry with Rice
Red curry is purchased as a paste in the Asian area of your grocery store. It has a different flavor than yellow curry and lends itself perfect to the pork stir fry!
Ingredients
1 small pork loin
2 tsp red curry paste
2 tbsp seasoning sauce
1 tbsp oyster sauce
1 can bamboo shoots ( 8 oz can), undrained
1/2 carrot, peeled and thinly sliced
1 tsp garlic salt
1 tbsp black pepper
Cooking oil
Cooked rice
Instructions

Chop the small pork loin into bite size pieces and set aside.

Heat a large frying pan or wok on the stove and add about 3 tbsp of cooking oil to the pan.

Add the pork (if desired, add 4-5 kaffir leaves and sauté with the pork) and red curry paste and fully cook the pork pieces.

Add the seasoning sauce (I use Golden Mountain), oyster sauce along with the bamboo shoots (liquid and all) and carrots. Sauté for about 2 minutes, add the garlic salt and black pepper.

Serve with freshly made rice and enjoy!
