Red Curry Noodle Soup

Red Curry Noodle Soup

This red curry noodle soup is a great idea for dinner. Rich, bright and easy to make, your family will love this soup anytime of the week!

Ingredients

2 chicken breasts
3 garlic cloves, minced
1 red bell pepper, diced
1 onions, diced
2 tbsp red curry paste
1 tbsp finely minced ginger
6 cups chicken stock
1/4 cup Goya Recaito cilantro soup base
1 can coconut milk, 13.6 ounce can
1 tbsp fish sauce
1 tbsp brown sugar
1 package rice noodles, 8 ounces
3 green onions, chopped or regular chopped onion (garnish)
1/4 cup freshly chopped basil
Juice from 2 limes
Salt and pepper to taste
Olive oil

Instructions

Fully cook the chicken breasts, cut into bite size pieces and set aside.

Heat a large pot on the stove and add enough olive oil to lightly coat the bottom of the pan.

To the pot, add the chopped cooked chicken, garlic cloves, diced red bell pepper, onions, red curry paste and minced ginger. Sauté everything together until very fragrant, about 3 minutes.

Add the chicken stock, Goya Recaito cilantro soup base, coconut milk, fish sauce and brown sugar, stir everything together. Bring to a boil, reduce to a simmer and add the rice noodles. Simmer for about 5 minutes or until the noodles are tender and cooked through.

Remove form the heat and add the chopped green onions (can use regular onions), freshly chopped basil and the fresh lime juice. Stir everything together, adjust salt and pepper to taste, serve and enjoy!
