Raspberry Oatmeal Cookie Bars

Raspberry Oatmeal Cookie Bars

Looking for a delicious dessert idea? My raspberry oatmeal cookie bars are the best!

Ingredients

1 cup flour
1 1/2 cups old fashioned rolled oats
1/2 cup brown sugar
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1 stick butter, 1/2 cup softened
For the Raspberry Filling: 1 1/2 cups raspberry puree
1/2 cup sugar
2 1/2 tbsp cornstarch
2 tsp vanilla

Instructions

Preheat your oven to 350 degreeā€™s.

In a large bowl, combine the flour, old fashioned rolled oats, brown sugar, baking soda, cinnamon, salt and the soften butter. Using your hands, mix everything together thoroughly. Will be a course crumbly texture.

Line an 8x8 baking dish with some parchment paper and transfer about 2/3 of the oatmeal mixture to the prepared pan. Press it down to form bottom crust. Set aside.

In another bowl, add the raspberry puree, sugar, cornstarch and vanilla mixing everything together until combined.

Pour the raspberry puree over the prepared crust and sprinkle the remaining crumble mixture over the top of the raspberry mixture.

Place in the oven and bake for approximately 35 minutes or until it is golden brown.

Remove from the oven, let cool completely before cutting. Serve and enjoy!
