Raisin Filled Christmas Cookies
My grandma used to make these by the dozens when I was a child. Unfortunately, I did’t like these cookies as a child but I love them now as an adult. Be creative and mix any type of dried fruit if you are not a fan of raisins and enjoy!
Ingredients
1 batch Chef Bryan’s sugar cookies
For the Filling:
1 cup golden raisins
1 cup raisins
1 cup walnuts
2 cups water
1 tbsp cornstarch
3 tbsps flour
1 cup brown sugar
2 tsp vanilla

Preheat your oven to 350 degree’s.

To make the filling, add the golden raisins, raisins and walnuts to your food processors and pulse several times to chop everything up together.

In a large sauce pan, add the water, cornstarch, flour, brown sugar and vanilla whisking everything together to combine.

Add the raisin mixture stir to combine. Bring the filling to a boil while stirring and boil for three minutes while stirring.

Remove the filling from the heat and let it cool down to room temperature.

Lightly flour your work surface and roll the dough out to about 1/8 inch thick. Cut into 3 inch rounds.

Spoon about 1 tbsp of the raisin filling into the center of one of the round cookie cut outs. Place a second cookie cut out on top and press the edges down to seal the edges.

Place the prepared cookies on a parchment lined baking sheet and into your preheated oven for about 12 -15 minutes or until the cookies are golden around the edges.

Remove from the oven and allow the cookies to cool on the cookie sheet, remove, serve and enjoy!
