Quick and Easy Fruit Coffee Cake
I love working with self-rising flour because it takes the guess work out of leavening agents. When I created this recipe, I wanted to use my delicious pear butter I had made. If you don’t have pear butter, simple use any pie filling fruit, mix and match and you’ll have a delicious and easy fruit coffee cake!
Ingredients
1 1/2 cups sugar
1 cup milk
2 eggs
2 tsp vanilla
1/3 cup oil
1 tsp salt
3 cups self-rising flour
2 cups fruit filling, your choice
1/2 cups brown sugar
1 tbsp cinnamon
Vegetable Oil Spray

Preheat your oven to 350 degree’s.

In a large mixing bowl, combine the sugar, milk, eggs, vanilla, oil and salt. Whisk everything together to combine.

Add flour and and mix mix together, creating a sticky batter.

Fully spray a 9 inch cake round liberally with vegetable oil.

Spread 1/2 of the batter in your prepared cake pan and spread the fruit of your choice over the top of the batter. I just use pie fillings I have in my pantry.

Spread the other half of the batter over the top and swirl it into the fruit. Sprinkle with the cinnamon and brown sugar and place on a baking sheet. Place in your preheated oven and bake for approximately 30 minutes or until starting to turn golden brown on top and fruit filling is bubbling.

Remove from the oven, cool, serve and enjoy!
