Pumpkin Oatmeal Chocolate Chip Cookies

Pumpkin/Oatmeal Chocolate Chip Cookies

These delicious pumpkin chocolate chip cookies will bring a smile to your face. If you choose, add some old fashioned oats and turn them into pumpkin oatmeal chocolate chip cookies.

Ingredients

2 cups flour
1 cup old fashioned oats (optional)
2 tsp baking powder
1 tsp baking soda
2 tbsp pumpkin pie spice
1/2 tsp salt
1/2 cup sugar
1/2 cup brown sugar
1/2 cup vegetable oil
1 large egg
2 tsp vanilla
1 cup canned pumpkin puree
1 1/2 cups semi-sweet chocolate chips

Instructions

Preheat your oven to 350 degreeā€™s.

In a large bowl, add the flour, baking powder, baking soda, pumpkin pie spice and salt. Using a whisk, combine the dry ingredients together and set aside.

In the bowl of your mixer, combine the sugar, brown sugar and vegetable oil. Mix the sugar and oil together for about 3 minutes.

Add the egg and vanilla to the sugar mixture and blend well. Add the pumpkin puree and mix together.

Add the dry ingredients to the wet ingredients and mix until combined. Fold in the chocolate chips.

Spoon drop the cookies on a parchment lined baking sheet and bake in the preheated oven for about 12 minutes or until they are golden brown.

Remove the cookies from the oven and let them cool on the baking sheet. If desired, make a buttercream frosting and frost the cookies before serving. Serve and enjoy!
