Pumpkin Chocolate Chip Cookies
Sometimes the best recipes are those discovered by accident and that’s exactly what happened with these cookies. I started with my famous chocolate chip cookie recipe and added pumpkin puree to create the most amazing pumpkin chocolate chip cookies ever!
Ingredients
1 pound butter, room temperature
2 cups brown sugar
1 ½ cups sugar
3 eggs
1 tsp salt
1 tbsp baking soda
2 tbsp vanilla
2 cups pumpkin puree
1 package semi sweet chocolate chips (about 3 cups)
8 1/2 cups flour
1 ½ cup chopped walnuts (optional)
Instructions
1
Cream together butter and sugars for about 3 minutes.
2
Add the eggs one at a time and completely incorporate the egg before adding the next one.
3
Add the salt, baking soda, vanilla, pumpkin puree and the chocolate chips blending everything together. Be sure to scrape the sides of the bowl to incorporate all of the ingredients.
4
Add the flour and blend.
5
Drop desired cookie dough size onto a prepared baking sheet. I fit about a dozen per baking sheet.
6
Bake in a preheated 350 degree oven for about 11-14 minutes or until desired color is reached.
