Ingredients
For the Pickled Red Onions:
5 red onions, thinly sliced
2 cups water
2 cups vinegar
2-4 tbsp salt
1/4 cup sugar
3-4 sweet peppers, sliced
8-10 garlic cloves, smashed
2 tbsp pickling mix
1 tbsp red pepper flakes
For the Pulled Pork Tacos:
4 cups pulled pork
2 cups enchilada sauce
2 cups drippings from the pork roast
Corn tortillas
Cooking oil
Salt and pepper to taste
Instructions

To make the pickled red onions, start by thinly slicing 5 red onions and placing them in a large bowl. Cover the onions with boiling water and let sit for 20 minutes. Drain the onions and set them aside.

In a separate bowl, mix together 2 cups of water, 2 cups of vinegar, 1/4 cup of salt, and 1/4 cup of sugar until everything is dissolved. Set this pickling liquid aside.

In a large jar or several smaller jars, add sliced sweet red peppers, smashed garlic cloves, pickling mix, and red pepper flakes. Add the prepared red onion slices to the jar(s) and pour in the pickling liquid. If needed, make more pickling liquid to cover the onions completely.

Refrigerate the pickled onions for up to two weeks in an airtight container.

To make the pulled pork tacos, start by adding 4 cups of pulled pork, 2 cups of enchilada sauce, and 2 cups of drippings from the pork roast to a large pot. Simmer and reduce the mixture by half.
