Potato Pancakes-Latkes

Potato Pancakes

Many folks know these as “latkes” but I like potato pancakes because I serve them with ham, mustard, sour cream, applesauce, summer salads, pickles…it’s really up to you how you serve them. Enjoy these potato pancakes!

Ingredients

3 medium russet potatoes
1 medium onion
3 large eggs
1 cup bread crumbs
1/3 cup flour
1 tbsp salt
1 tbsp pepper
Vegetable oil

Instructions

Peel and shred the potatoes rinsing them throughly in cold water. Squeeze out as much of the water as you can. Place the shredded potatoes in a large bowl

Shred the medium onion and place it in the bowl with the potatoes.

To the potatoes, add the eggs, bread crumbs, flour, salt and pepper. Mix everything together to combine.

Heat a large frying pan on the stove and add enough oil so you have about 1/2 inch of oil in the pan.

Heat the oil while shaping the potato pancakes. To shape them make a round ball about the size of a baseball and then flatten that ball.

Fry the potato pancakes until they are golden brown on each side.

Serve the potato pancakes with sour cream, applesauce, brown mustard, pickles or a summer salad on the side. Enjoy!
