Pork Loin with Sautéed Green Beans and Bell Peppers, Roasted Potatoes, and Fresh Lettuce Salad

This dish combines tender pork loin, crispy roasted potatoes, and a vibrant sauté of green beans and bell peppers, all accompanied by a fresh lettuce salad. It’s a balanced, delicious meal that’s perfect for any night of the week.

Ingredients

For the Pork Loin: 1 pork loin (about 1.5-2 lbs)
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon paprika
Salt and pepper to taste
For the Roasted Potatoes: 4 medium potatoes, diced
2 tablespoons olive oil
1 teaspoon dried rosemary or thyme
Salt and pepper to taste
For the Sautéed Green Beans and Bell Peppers: 1 cup green beans, trimmed
1 bell pepper, sliced (any color)
1 tablespoon olive oil
1 clove garlic, minced
Salt and pepper to taste
For the Fresh Lettuce Salad: 1 head lettuce, chopped
1 cucumber, sliced (optional)
1 small carrot, shredded (optional)
Your favorite salad dressing

Instructions

Roast the Potatoes: Preheat the oven to 400°F (200°C). Toss the diced potatoes with olive oil, rosemary (or thyme), salt, and pepper. Spread the potatoes on a baking sheet and roast for 25-30 minutes, or until golden and crispy, tossing halfway through.

Prepare the Pork Loin: While the potatoes are roasting, season the pork loin with salt, pepper, paprika, and minced garlic. Heat olive oil in a large skillet over medium-high heat. Sear the pork loin on all sides until browned, then reduce the heat to medium, cover, and cook for 15-20 minutes or until the internal temperature reaches 145°F (63°C). Remove the pork from the skillet and let it rest for 5 minutes before slicing.

Sauté the Green Beans and Bell Peppers: In the same skillet used for the pork, add a bit more olive oil if needed. Add the minced garlic and sauté for about 30 seconds. Add the green beans and bell peppers, season with salt and pepper, and sauté for 5-7 minutes, or until the vegetables are tender-crisp.

Assemble the Fresh Lettuce Salad: In a large bowl, combine the chopped lettuce with cucumber and carrot if using. Toss with your favorite salad dressing.

Serve: Plate the sliced pork loin with a side of roasted potatoes and sautéed green beans and bell peppers. Serve the fresh lettuce salad on the side.
