Ingredients

14-16 thin slices of pork loin
1 large onion, thinly sliced
1 tablespoon olive oil
Salt and pepper to taste
4 sandwich buns or rolls
For the apple slaw: 2 cups shredded cabbage or coleslaw mix
1 apple, thinly sliced
2 tablespoons mayonnaise
1 tablespoon rice vinegar
1-2 tsp sugar
Salt and pepper to taste

Instructions

Heat the olive oil in a skillet over medium heat. Add the sliced onions and cook until caramelized, stirring occasionally. This usually takes about 15-20 minutes. Remove the onions from the skillet and set them aside.

Season the pork loin slices with salt and pepper. In the same skillet, cook the pork loin slices for about 3-4 minutes per side or until they are cooked through and browned. Remove from heat.

In a bowl, combine the shredded cabbage or coleslaw mix with the sliced apple. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper. Pour the dressing over the cabbage and apple mixture, tossing well to coat.

Split the sandwich buns or rolls and lightly toast them if desired.

To assemble the sandwiches, place a few slices of the cooked pork loin on the bottom half of each bun. Top with a generous amount of caramelized onions and a scoop of apple slaw. Place the top half of the bun on the sandwich.
