Pork Enchiladas

Pork Enchiladas

Delicious enchiladas are easy to make and can be made with a variety of proteins. Whether you like pork, beef or vegetarian these are easy to make and so tasty!

Ingredients

2 cups cooked chopped pork
1/2 onion, chopped
4 garlic cloves, minced
8 corn tortillas
1 can prepared enchilada sauce (28 oz can)
2 cups shredded cheese
2 cups chopped lettuce
1 cup sour cream
1 cup prepared salsa

Instructions

Preheat your oven to 350 degree’s.

Heat a large sauté pan and add the cooked chopped pork, onion and garlic. Saute for 3-5 minutes, reheating the pork as needed.

Spray an 8x8 baking dish with vegetable oil and spoon about 1 cup of prepared enchilada sauce in the bottom of the pan, spreading it evenly.

Heat the corn tortillas so they are flexible and dip them in the enchilada sauce to coat. Divide the pork mixture and fill each corn tortilla, rolling it up and placing it seem side down in the prepared baking dish.

Pour the remaining enchilada sauce over the enchiladas and sprinkle with the shredded cheese.

Bake in the preheated oven until the sauce is bubbling and the cheese is melted.

Serve with shredded lettuce, sour cream, salsa, Spanish style rice and re-fried beans.
