CWCB Pork Carne Asada

Pork Carne Asada

This delicious pork carne asada taco is guaranteed to keep people happy and coming back for more. You’re going to love these tacos and will be the envy of your family and friends.

Ingredients

4 pounds thinly sliced pork shoulder
Corn tortillas
Freshly diced onion
Freshly chopped cilantro
Pork Marinade: 8 dried guajillo chili peppers, seeds removed
Juice of 1 lime
2 tbsp white vinegar
1/4 cup pineapple juice
4 garlic cloves
1 small onion, chopped
1 tsp cinnamon
1 tbsp dried oregano
2 tsp cumin
1 tbsp salt
2 tsp pepper
Avocado Sauce: 1 ripe avocado
Juice from 1 lime
1/2 bunch cilantro
1/2 cup mayonnaise
1/3 cup Mexican cream
1 small onion, diced
1 clove garlic
salt and pepper to taste

Instructions

Place the pork slices (you can use beef if you choose too) in a large bowl and set aside.

Remove the seeds from the dried guajillo chili peppers and rehydrate them in boiling water until they are tender.

In the bowl of you food processor, add the rehydrated guajillo peppers, lime juice, white vinegar, pineapple juice, garlic cloves, chopped small onion, cinnamon, oregano, cumin, salt and pepper. Puree everything together. Adjust salt and pepper as needed.

Pour the pork marinade over the thinly sliced pork and mix together making sure the pork is completely covered with the marinade. Cover and refrigerate for at least an hour or overnight.

Grill the marinaded meat until fully cooked through, remove from the grill and set aside for a few minutes while you finish putting everything else together.

To make the avocado sauce, pit and add just the avocado “flesh” into the food processor along with the lime juice, cilantro, mayonnaise, Mexican cream, diced small onion, garlic, salt and pepper to taste. Puree everything together.

To assemble, thinly slice the meat, toast the corn tortillas on the grill or over an open flame.

Place the thinly sliced meat on the prepared tortilla along with some finely diced onion, cilantro and a dollop of the avocado sauce. Serve and enjoy!
