Pork and Noodle Soup with Homemade Chili Oil

Ingredients
For the chili Sauce:
1 cup vegetable oil
1 cup diced red onion
5-6 whole garlic cloves, smashed
6-8 slices fresh ginger
3/4 cup red pepper flakes
1-2 tbsp prepared chili bean sauce
1 1/2 tbsp sugar
1/2 cup soy sauce
1 tsp Chinese five spice
For the Soup:
1 rack pork ribs
3-4 bay leaves
1 medium onion, sliced
1/3 cup soy sauce
2 tbsp chili sauce
2 tbsp black vinegar
1 pkg fettuccini noodles, cooked
Fresh spinach

To make the chili sauce: To a large pan add the oil and diced red onion and simmer the onion in the oil. After a couple of minutes, add the smashed garlic cloves and fresh ginger slices. Simmer the ingredients in the oil for about 5 minutes.

After about 5 minutes, add the red pepper flakes and let everything simmer for an additional 2-3 minutes. Don’t let the oil get too hot, you don’t want to fry the ingredients, just let them simmer in the oil.

Add the prepared chili bean sauce, sugar and the soy sauce. When adding the soy sauce be sure to add it around the side of the pan and not directly into the oil. Mix everything together and continue simmering the ingredients for another 3-5 minutes. Remove from heat and store in an airtight glass container. Use as needed.

To make the soup: add the pork ribs to a large bowl and cover with about 8 cups of water. Bring to a boil, reduce to a simmer and cook for about thirty minutes. Add the bay leaves, sliced onion, soy sauce, chili sauce and black vinegar. Continue to simmer for an additional 30 minutes.

Cook the pasta according to the package directions, drain and set aside until ready to use.

When ready to serve, place a handful of noodles in the bottom of the with some fresh spinach on one side of the bowl and a couple of pork ribs on the other side of the bowl. Ladle the soup over the top, serve with your favorite sides and enjoy!
