Pineapple Salsa Burrito Bowls

Grilled chicken, black beans, and rice are topped with sweet and zesty pineapple salsa for the perfect combination. It’s a simple and healthy lunch that’s sure to be a hit!

Ingredients

For the Chicken: 2 boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp cumin
1 tsp chili powder
1 tsp garlic powder
Salt and pepper, to taste
For the Pineapple Salsa: 1 cup fresh pineapple, diced
1/4 cup red onion, diced
1/4 cup cilantro, chopped
1 jalapeño, seeded and diced
Juice of 1 lime
Salt, to taste
For the Bowl: 2 cups cooked brown rice
1 can black beans, drained and rinsed
1 avocado, sliced
1/4 cup sour cream or Greek yogurt (optional)
Fresh cilantro for garnish

Instructions

In a small bowl, mix the olive oil, cumin, chili powder, garlic powder, salt, and pepper. Rub the mixture over the chicken breasts. Heat a grill pan or outdoor grill to medium-high heat. Grill the chicken for 6-7 minutes on each side, or until fully cooked (internal temperature of 165°F). Let the chicken rest for 5 minutes, then slice.

In a medium bowl, combine the diced pineapple, red onion, cilantro, jalapeño, lime juice, and salt. Stir well and set aside.

Divide the cooked rice and black beans evenly into four bowls. Top each bowl with grilled chicken slices, pineapple salsa, and avocado slices. Add a dollop of sour cream or Greek yogurt, if using, and garnish with fresh cilantro.
