Pickled Vegetables
These pickled vegetables are so easy to make and delicious! Mix and match your vegetables, herbs and spices for a wonderful twist.
Ingredients
4 cups chopped assorted vegetables
1 quart jar, cleaned
2 cups spring water
2 tbsps season salt
2 tbsp Italian seasoning, optional
Instructions

Place the chopped assorted vegetables into a clean quart jar.

In a separate mixing jar, mix the spring water, season salt (or regular sea salt) and herbs together until the salt is dissolved.

Pour the water solution over the vegetables and loosely place the lid on the jar.

Leave the jar out on the counter top (out of direct sunlight) for several days to start the fermentation process. If you seal the jar, be sure you release the pressure several times a day from the jar.

Once the vegetables reach the desired “tartness” seal the jar and place it in the refrigerator. BE SURE to release the pressure in the jar several times a day.

Serve the pickled vegetables with your favorite meal and enjoy!
