Pecan Bars
I absolutely love pecan bars or pie. The rich custard and short dough crust make these pecan bars a favorite for dinner or a tasty sweet snack.
Ingredients
3 cups whole wheat flour
1/3 cup sugar
1/4 tsp salt
1 1/2 cups cold butter, cubed
6 eggs
2 cups corn syrup
1 1/2 cups sugar
6 tbsp melted butter
1 tbsp vanilla extract
4 cups chopped pecans

In the bowl of your food processor add the whole wheat flour, sugar, salt, and cold butter pieces. Pulse until the mixture resembles coarse meal.

Generously spray a baking sheet with edges (half sheet) with vegetable spray to prevent the pecan bars from sticking.

Transfer the flour mixture to the prepared baking dish and press it down making sure it is even. Bake in your preheated 350 degree oven for 20 minutes.

While the crust is baking in a large bowl, combine the eggs, corn syrup, melted butter, vanilla extract and mix together until through combined. Add the chopped pecans and mix to combine the pecans.

When the crust is finished baking, remove it from the oven and pour the pecan filling over the hot crust. Place the pecan bars back in the oven and bake an additional 20 minutes or until the filling is set.

When the pecan bars are fully baked, remove them from the oven and allow them to cool completely before cutting. Serve and Enjoy!
