1 pound butter, room temperature
1 cup creamy peanut butter
1 ½ cups brown sugar
1 ½ cups granulated sugar
3 large eggs
1 tsp salt
1 tbsp baking soda
2 tbsp vanilla extract
5 ½ cups all-purpose flour
1 package semi-sweet chocolate chips (about 3 cups)
1 ½ cups chopped peanuts or walnuts (optional)
Instructions
1
Cream the Butters and Sugars: In a large mixing bowl, cream together the butter, peanut butter, brown sugar, and granulated sugar for 3 minutes until light and fluffy.
2
Add Eggs One by One: Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next.
3
Blend in Dry Ingredients: Add the salt, baking soda, and vanilla extract to the mixture. Scrape down the sides of the bowl to evenly combine the ingredients.
4
Incorporate the Flour: Gradually add the flour to the wet mixture and mix until just combined.
5
Mix in the Chocolate Chips: Fold in the chocolate chips and optional nuts until evenly distributed throughout the dough.
6
Shape and Bake: Drop rounded spoonfuls of dough onto a prepared baking sheet, leaving space for spreading. Bake in a preheated 350°F oven for 11-14 minutes, or until golden brown and set to your liking.
7
Cool and Enjoy: Allow cookies to cool on the baking sheet for 2 minutes before transferring to a wire rack.
