Peach Balsamic Chicken Skillet
I love skillet dinners because they are one dish! This peach and balsamic chicken skillet is great idea for dinner.
Ingredients
2 chicken breasts cut in half lengthwise
4 garlic cloves, minced
1 shallot, chopped
4 peaches, sliced
1/4 cup balsamic vinegar
1/3 cup freshly chopped basil
salt and pepper
Instructions

Boil the chicken breasts until they are fully cooked. Set aside until ready to use.

Heat a large skillet on the stove and add enough cooking oil to lightly coat the bottom of the pan. Add the minced garlic and chopped shallot, sautéing for about 3 minutes.

Add the cooked chicken and pan sear to caramelize both sides of the chicken (about 2-3 minutes on each. Remove from the pan and set aside.

Add the sliced peaches and balsamic vinegar to the pan sautéing for a couple of minutes.

Return the chicken to the pan to coat with balsamic vinegar glaze, sprinkle with the chopped basil and enjoy with your favorite sides.
