Peach and Prosciutto Summer Pasta Delight

Indulge in the perfect summer meal with our Peach and Prosciutto Pasta Delight! This refreshing dish combines the sweetness of ripe peaches with the savory taste of prosciutto, all tossed in a light balsamic dressing. Perfect for a quick lunch or a light dinner, it’s a delicious way to enjoy the flavors of the season.

Ingredients

12 oz (340g) pasta (such as farfalle, penne, or fusilli)
2 ripe peaches, thinly sliced
4 oz (115g) prosciutto, thinly sliced and torn into pieces
2 cups fresh arugula
1/4 cup toasted pine nuts (optional)
1/2 cup grated Parmesan cheese
2 tablespoons olive oil
1 tablespoon balsamic glaze (plus more for drizzling)
1 clove garlic, minced
Salt and freshly ground black pepper, to taste
Fresh basil leaves, for garnish (optional)

Instructions

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

In a small bowl, whisk together the olive oil, balsamic glaze, minced garlic, salt, and pepper.

In a large mixing bowl, combine the cooked pasta, sliced peaches, torn prosciutto, and fresh arugula. If using, add the toasted pine nuts for an extra crunch.

Pour the prepared dressing over the pasta mixture. Toss gently to combine, ensuring everything is well coated.

Transfer the pasta to a serving platter or individual plates. Sprinkle with grated Parmesan cheese and garnish with fresh basil leaves if desired. Drizzle with a bit more balsamic glaze for an extra touch of flavor.
