
Pasta Primavera
The best words to describe this dish would be “garden fresh”. Even though you may not have a garden, use in season vegetables to create your delicious spring time pasta dish!

Ingredients
1 box penne pasta (1 pound box)
1 bunch broccoli florets
1 bunch asparagus (chopped)
3-4 carrots, julienned
1 small summer squash, sliced
3-4 roma tomatoes, chopped
1/2 cup chopped fresh parsley
1/2 cup chopped Italian Salami
1 tbsp minced garlic
1 cup shredded parmesan cheese
Juice from one lemon
Salt and pepper to taste
Olive oil
Instructions

Cook the pasta according to the package directions, drain and set aside.

Heat a large sauté pan on the stove and add just enough olive oil to lightly coat the bottom of the pan.

Add the broccoli florets, chopped asparagus, julienned carrots, sliced summer squash, chopped tomatoes, chopped parsley, chopped salami and minced garlic. Sauté for a couple of minutes or until very fragrant.

Add the cooked pasta into the sautéed vegetables and toss everything together. Heat through if the pasta is cold.

Add the lemon juice and shredded parmesan cheese to the pasta, toss to combine everything. Adjust salt and pepper to taste, serve and enjoy!
