Pasta and Clams

Pasta and Clams

This delicious dish is my rendition of an amazing dish from Sicilia Mia. If you truly want to experience all of their delicious food, head one over their place where you are always family! Sicilia Mia

Ingredients

2 pounds fresh clams
1 1/2 pounds fresh pasta
2 cups sliced cherry tomatoes
2 tbsp freshly minced parsley
3-4 garlic cloves
1 lemon, zested and quartered
1 cup pasta water
1/2 cup white wine
Salt and pepper to taste
Olive oil

Instructions

Clean the fresh clams and set aside.

Cook the pasta according to the package directions, drain and set aside.

Heat a large sauté pan on the stove and add enough olive oil to lightly coat the bottom of the pan. Sauté the sliced cherry tomatoes, garlic cloves and 2 lemon quarters until fragrant.

Add the drained pasta, clams and chopped parsley to the pan and sauté/steam the clams until they are fully cooked. The clams will fully open when cooked.

Serve the pasta dish and clams with a sprinkling of shredded parmesan cheese.
