Parisian Hot Chocolate with Homemade Marshmallows

Transport yourself to the charming streets of Paris with this decadent hot chocolate, perfectly paired with soft, fluffy homemade marshmallows. Rich dark chocolate and creamy milk create a velvety base, while the marshmallows add a touch of sweetness and fun. This duo is perfect for cozy evenings, dessert gatherings, or any moment that calls for a luxurious treat.  

Ingredients

For the Parisian Hot Chocolate: 2 cups whole milk
1 cup heavy cream
8 oz bittersweet dark chocolate (70% cacao or higher), finely chopped
2 tablespoons granulated sugar (optional, adjust to taste)
1 teaspoon pure vanilla extract
Whipped cream or chocolate shavings, marshmallow for garnish (optional)
For the Homemade Marshmallows: 3 packets unflavored gelatin
1 cup cold water, divided
2 cups granulated sugar
1/2 cup light corn syrup
1/4 teaspoon salt
1 tablespoon pure vanilla extract
1/4 cup powdered sugar
1/4 cup cornstarch
Nonstick spray

Instructions

Prepare the Marshmallows: Combine powdered sugar and cornstarch. Grease a 9x13-inch pan with nonstick spray, then dust with the powdered sugar mixture.

Bloom the Gelatin: Sprinkle gelatin over 1/2 cup cold water in a stand mixer bowl. Let sit for 10 minutes. Heat granulated sugar, corn syrup, salt, and remaining water in a saucepan over medium-high heat until sugar dissolves. Attach a candy thermometer and boil until it reaches 240°F.

Whip the Base: With the mixer on low, slowly pour the hot syrup into the bloomed gelatin. Gradually increase speed to high and whip for 8–10 minutes until fluffy. Add vanilla in the final minute.

Set the Marshmallows: Spread the mixture in the pan and dust with powdered sugar mixture. Let set for 4 hours or overnight. Cut into shapes and toss in the powdered sugar mixture. Use as needed.

Make the Hot Chocolate: Warm milk and heavy cream in a saucepan over medium-low heat until steaming. Do not boil. Whisk in chopped chocolate until smooth. Stir in sugar (if desired) and vanilla extract. Simmer for 3–5 minutes, stirring frequently.

Assemble and Serve: Pour hot chocolate into mugs. Top with freshly made marshmallows for a luxurious finish and sprinkling of cinnamon.
