Ingredients

For the Pork Chops and Apples: 4 boneless pork chops (about 1-inch thick)
2 apples, cored and sliced
1 small onion, thinly sliced
1/2 cup apple cider
1/2 cup chicken broth
1 tbsp fresh thyme, chopped
2 tbsp butter
2 tbsp olive oil
Salt and pepper to taste
For the Mashed Potatoes: 4 large russet potatoes, peeled and cubed
1/2 cup milk (or heavy cream for a richer taste)
4 tbsp butter
For the Green Beans: 1 lb fresh green beans, trimmed
1 tbsp olive oil
2 cloves garlic, minced
Salt and pepper to taste
Lemon wedge (optional, for serving)

Instructions

Prepare the Pork Chops and Apples: -Season pork chops with salt and pepper on both sides. - Heat olive oil in a large skillet over medium-high heat. Add pork chops and cook for 4-5 minutes per side, or until golden brown and cooked through. Remove from skillet and set aside. - In the same skillet, add butter, onion, and apple slices. Sauté until softened, about 5 minutes. - Pour in apple cider and chicken broth, stirring to deglaze the pan. Add fresh thyme. - Return pork chops to the skillet and simmer for 5 minutes, allowing the flavors to meld.

Make the Mashed Potatoes: - Place potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15 minutes. - Drain and return potatoes to the pot. Add butter and milk, then mash until smooth and creamy. Season with salt and pepper.

Cook the Green Beans: - In a separate skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, about 1 minute. - Add green beans and sauté until crisp-tender, about 5-7 minutes. Season with salt, pepper, and a squeeze of lemon juice if desired.
