Oreo Cupcakes with Whipped Ganache

Oreo Cupcakes with Whipped Ganache

Here’s a delicious idea for Valentines or anytime of the year. Oreo cupcakes with whipped ganache frosting and chocolate dipped fruit. What sweetheart would love these!

Ingredients

1 box Oreo Cake Mix
1 1/2 cups chopped dark chocolate
1 cup heavy whipping cream
1 cup crush Oreos
Fruit to dip

Instructions

Follow the directions for making the Oreo cake mix and bake them off as cupcakes. Remove from the oven and allow them to completely cool.

To make the ganache, place the chocolate pieces into a large bowl and set aside. Bring the heavy cream to a boil and pour it over the chocolate pieces. Allow the hot cream to sit over the chocolate for about 5 minutes. Stir the chocolate and cream mixture together until combined, smooth and shiny.

Let the ganache cool to allow it to thicken slightly. Dip the fruit into the chocolate ganache and place the dipped fruit onto a parchment paper to cool and firm up.

Cool the ganache in the freezer for about 10 minute so that it firms up completely. Once firm, add the firmed up ganache to your mixer and “whip” the ganache into a light and fluffy frosting.

Frost the cupcakes with the whipped ganache frosting, sprinkle with the crush Oreo cookies and top with one of the dipped fruit. Serve and enjoy!
