Orange Chicken
This is one of my all time favorite recipes because I love orange chicken.
Ingredients
2-3 lbs boneless, skinless chicken thighs
2 eggs
1 tsp salt
1 tsp pepper
1/2 cup cornstarch
1/4 cup self-rising flour
Oil for frying
For the Sauce:
1 tbsp cornstarch
1/4 cup mirin
1/4 cup water
1 tsp sesame seed oil
1/4 cup soy sauce
1/4 cup sugar
1/3 cup white vinegar
zest and juice of one orange
1 1/2 tbsp minced ginger root
3 garlic cloves, minced
1 tsp red pepper flakes
Instructions

Slice the chicken into bitesize pieces and set aside.

In a medium size bowl, whisk the eggs, salt and pepper together until combined.

In a separate bowl whisk the cornstarch and flour together.

Dip the chicken into the eggs and dredge in the flour mixture and set on a baking sheet.

Heat a large frying pan and add enough oil to be able to easily fry the chicken pieces.

Fry the prepared chicken in batches so you don’t crowd them in the pan. When finished pour the oil off into a safe container.

To make the sauce; whisk everything together in a large sauce pan, making sure the cornstarch is incorporated.

Bring to a boil while stirring, reduce heat and simmer for about 2 minutes.

Add the cooked chicken pieces and orange sauce into the saute pan along with the cooked chicken pieces.

Serve over rice and enjoy!
