Ingredients
1.5 lbs boneless, skinless chicken thighs

2 tbsp olive oil

1 tsp ground cumin

1 tsp ground coriander

½ tsp ground cinnamon

½ tsp smoked paprika

1 tsp salt

½ tsp black pepper

1 cup couscous

1 ¼ cups chicken broth

½ cup dried apricots, chopped

¼ cup toasted slivered almonds

2 tbsp chopped fresh parsley

Prep & Season Chicken: In a bowl, mix cumin, coriander, cinnamon, paprika, salt, and pepper.
Rub spice blend all over chicken thighs.

 Sear chicken 3–4 minutes per side until browned.

 Transfer skillet to oven and bake 15–20 minutes until cooked through (165°F internal temp).

Make Couscous: While chicken bakes, bring chicken broth to a boil.

Stir in couscous and chopped apricots.
 Cover, remove from heat, and let sit 5 minutes.
 Fluff with a fork, then stir in almonds and parsley.
